专访香港海景嘉福洲際酒店總經理莊俊文


在2023即将离我们而去,充满希望的2024即将拉开帷幕,而中国农历龙年壬辰年春节也很快到来,在这个跨年时节,我们荣幸的专访香港唯一的洲际酒店品牌—海景嘉福洲際酒店總經理莊俊文先生 (John Drummond)。

来自英國蘇格蘭的莊俊文先生投身酒店行業超過二十五年,資歷深厚,在世界三大洲均擁有豐富工作經驗。於2004年加入海景嘉福洲際酒店擔任行政總廚,於2006年晉升為餐飲部總監,更自2010年起成為酒店的駐店經理,其职业经历颇具东西方交融的故事性,以下是本次精彩的年终岁末专访:

InterContinental Grand Stanford Hong Kong is  the only InterContinental brand hotel in Hong  Kong. As the leader of the hotel for several years, what do you think sets the InterContinental brand's values apart from other five-star hotel  brands in Hong Kong? In terms of the InterContinental Grand Stanford Hong Kong itself,  what is its greatest characteristic? How does it differentiate itself from other five-star hotels in Hong Kong?


海景嘉福洲際酒店是香港唯壹的洲際品牌酒店,作爲連續多年的掌舵人,和其它在香港的五星級酒店品牌,您認爲洲際的品牌價值觀獨特性在哪?而海景嘉福洲際酒店本身來講,最大的特質是什麽?和其它在港的五星級酒店區別在哪裏?

“InterContinental Hotels & Resorts (IHG) owns 19 brands and over 6,000 destinations with more than 880,000 guest rooms. It boasts a leading position on the global hospitality stage. Being part of IHG, InterContinental Grand Stanford Hong Kong benefited from its widely-known brand. Since its opening in 1981, the hotel’s 42 years of experience has attained profound understanding of the evolving local and international markets. Nestled right in front of the famed Victoria Harbour, the hotel stands in the midst of commercial and shopping centre, and is just a few minutes’ walk to the MTR East Tsim Sha Tsui Station. Besides its privileges in location, seasoned hotel associates who have been collaborating for years have developed connections and bonding on every part of product and service delivery, thus resulting in seamless services to guests. Looking back, InterContinental Grand Stanford Hong Kong has been honoured with the highest recognition, "World's Best Luxury Business Hotel," by the World Travel Awards. This year, it has also received accolades such as "Hong Kong's Leading Business Hotel" and "Hong Kong's Leading City Hotel" at the 2023 World Travel Awards, gaining high recognition from the international travel industry. What do you think are the reasons behind receiving recognition from various sectors and continuously winning awards?


回顧過往,海景嘉福洲際酒店榮獲世界旅遊大獎(World Travel Awards)頒發的「世界最佳豪華商務酒店」的最高榮譽,今年也獲得了世界旅遊獎2023中贏得「香港領先商務酒店」及「香港領先城市酒店」等殊榮,獲國際旅遊業界的高度認可,您認爲獲得各界認可並陸續獲得獎項的緣由是什麽?

We have learned that Mr. Drummond was born in Scotland, UK, and has a passion for traditional French cuisine. You initially made a name for yourself in the culinary industry as a chef before transitioning into hotel management. Coming from a chef background and transitioning into a comprehensive top managerial role, we believe you have unique insights and experiences to share. Could you please share your personal reflections and understanding with our readers?


我們了解到莊先生出生於英國蘇格蘭,是傳統法國美食的愛好者。您最早是以廚師身份於餐飲界嶄露頭角,期後進入了酒店管理層,從出身廚師行業,轉換到綜合管理者,想必您有個人獨特的感受和理解,和讀者分享壹下您的心得體會。

“It is enjoyable yet challenging, which is exciting at the same time. Every day is different in this diverse and evolving industry. A glamourous five-star hotel is shaped and maintained by a culmination of expertise, from cleaning the floor with right chemicals to maintaining the water boilers and targeted digital marketing. Nobody has the professional knowledge of every department. Being the head of the hotel means constant learning from others and growth. Everyone plays their parts. Showing encouragement, understanding and support to them is vital. And in turn, with their support,I can steer the ship towards the right direction smoothly.”

Do you enjoy living in Hong Kong? What changes over the years have left a deep impression on you? And in your daily life, do you have a preference for Chinese cuisine?

“To me, there is always a destination in life. Having been in Hong Kong for over 20 years has already shown how much I like it. From Australia to Dubai, then Taiwan and Bahrain, I finally landed at Hong Kong. The ultimate home I would call it. Its culture, vibrancy, the people, all impresses me. On the art side, I love Chinese ink paintings in particular. What also draws me is its food scene. Dim sum, Chinese tea, and street food like pineapple buns are some of my local favourites.


“对我来说,人生总有一个目的地。我在香港已经生活了20多年,这已经说明了我对香港的喜爱。从澳大利亚到迪拜,再到台湾和巴林,我最终来到了香港——我称之為最终的家。它的文化、活力和人民都给我留下了深刻印象。在艺术方面,我尤其喜欢中国的水墨画。吸引我的还有它的美食,点心、中国茶和菠萝包等街头小吃都是我的最爱。

We've heard that you developed a strong interest in whisky from a young age and are a devoted enthusiast with extensive knowledge in the field. It's also fascinating to learn that you serve as the whisky ambassador for the hotel.Do you have any suggestions or experiences to share with chinese consumers regarding whisky consumption and consumption behaviour? Additionally, within the hotel's own lounge, are there any value for-money whiskies that you would recommend? 


聽說您從小對威士忌產生濃厚興趣,是威士忌的深度愛好者,擁有豐富的威士忌知識,更有趣的是我們得知您本人兼任酒店的威士忌大使,您對中国的消費者和飲用威士忌各有什麽好的建議和經驗?分享壹下給大家。此外,您管理的酒店自有酒廊裏,有什麽性價比較好的威士忌值得您推薦?

“Attend whisky festivals in China. Open your heart and be daring to try out and taste them. Come to our annual Whisky Festival. Acclaimed as one of the biggest whisky festivals in town, our Hong Kong Whisky Festival, usually held in April or May, offers classes for various levels from beginners to connoisseurs. Last but not least, watch out for the whisky developing countries. In China there are numerous distilleries being built and they should not be ignored.

To recommend a brand is wrong as there are too many. To recommend a whisky, it is up to your taste buds to judge.


“参加中国的威士忌节。敞开心扉,大胆尝试和品尝。誠邀大家参加我们一年一度的威士忌节。我们酒店的香港威士忌节被誉为城中最大的威士忌节之一,通常在4月或5月举行,提供从初学者到鉴赏家的不同级别的课程。最后,多关注威士忌发展中国家。在中国,有许多酿酒厂正在兴建,它们不容忽视。

推荐一个品牌是不對的,因为品牌太多了。至于推荐哪种威士忌,那就要靠您的味蕾来判断了。

Last question: We know that Mr. Drummond, you joined InterContinental Grand Stanford Hong Kong as early as 2004, and it has been nearly 20 years since you served as the Executive Chef, and nearly 4 years as the General Manager. Working continuously for 20 years at a single hotel in a senior management position within the global five-star hotel industry is quite rare. Next year, you will celebrate your 20th anniversary at InterContinental Grand Stanford Hong Kong. Do you have any special feelings or reflections to share with everyone? Additionally, could you also share your insights and experiences with the young professionals in the workplace? Thank you!


最後壹個問題:我們知道,莊先生您早2004年就加入了海景嘉福洲際酒店,從您擔任行政總櫥開始,已經近20年,擔任總經理也近4年,在壹家酒店連續工作20年,在全球五星級酒店的高層管理崗位上是不多見的,明年即將迎來閣下在海景嘉福洲際酒店任職20周年的日子,您有什麽特別的感觸,分享給大家?也請您順便給現在職場的年輕人分享壹下您的感悟和經歷。

“It is rare serving the same hotel for long, serving the hotel here in Hong Kong for a long period is down to the vibrancy of the city and location as well as our owners. It is a privilege to me having been in different positions while remaining in the same hotel. From the Executive Chef to the Director of F&B and Resident Manager, and now the General Manager, I keep expanding my perspectives. It’s always learning and progressing. The essence, though, lies on the support from the team as well as our owner.

To the young professionals: Life is full of fun and excitement. Be open-minded and ready to face challenges. Communicate with people in person instead of a medium (like mobile or computer). Keep learning and make it to the fullest.


“在同一家酒店长期服务是很难得的,在香港长期服务是因为香港的活力、地理位置以及我们的业主。我很荣幸能在同一家酒店担任不同的职务。从行政总厨到餐饮总监和驻店经理,再到现在的总经理,我不断扩展自己的视野。我一直在学习和进步。不过,最重要的还是来自团队和业主的支持。

致年轻的职场人士:生活充满乐趣和精彩。要心胸开阔,随时准备迎接挑战。与人沟通时要当面交流,而不是通过媒介(如手机或电脑)。不断学习,尽情发挥。
